CHOLESTEROL LOWERING LEMON PICKLE



Many people suffer from cholesterol problems. If this is you, then you're at the right page. Indians have known the benefit of lemons many years ago. They believe that lemons are better than lime when it comes to cholesterol. You can also use lime if you don't have lemons. Its one of the fermented items we make and can be used as side dish. It helps break down oily and fatty stuff and aids with weight loss. 

WARNING: Don't take too much of this, only one or two pieces per meal because it contains salt.

Ingredients:
  • 10 Lemons (if it has seeds, even better!! its good for you)
  • 2 tbsp salt
  • 1 cup oil (sesame oil or vegetable oil)
  • 1 tbsp mustard seeds (mineral source)
  • 1 tsp fenugreek seeds powder (helps with ulcer)
  • 1/2 tbsp asofoetida powder (helps with gastric problems)
  • 2 tbsp chilli powder (helps with weight loss and muscle pain)
  • 4 dried chillies (helps with weight loss and muscle pain)
Method:
  1. Collect all ingredients.
  2. Wash the lemons thoroughly and put it in the steamer.
  3. Light the stove.
  4. Place the steamer on the stove and steam it for 5 minutes, no more (remove allow colour change of skin).
  5. Take the lemons out from the steamer and cool it down for 30 minutes.
  6. Cut each lemon into 8 small pieces.
  7. Put all the chopped lemon pieces in a bowl.
  8. Add salt to it and mix.
  9. Cover it with cloth or lid and let it marinate for 12 hours.
  10. Light the stove.
  11. Place a pan and heat it up.
  12. Pour the oil.
  13. After the oil is heated, add mustard seeds.
  14. Wait until you hear the cracking noise and add the dried chillies.
  15. Then add fenugreek seed powder, asofoetida, chilli powder and mix.
  16. Take the pan off the stove.
  17. Pour the warm masala on the marinated lemon pieces and mix it properly.
  18. Now you can smell the citric and spicy smell.
Serve it with any Indian dishes or with just rice and eat! Store it in a sterile glass jar. If you handle it hygienically, you can preserve it for a year!!
